Fresh Gluten-free Dairy free Coconut and Lime Nutty Cakes
And here again another easy-to-do recipe, with only great nutrient-dense ingredients, that can relieve your dessert or snack craving :-)
Obviously all organic, dairy-free, gluten-free.
This is the recipe for 6 cakes:
1. The Base preparation
Ingredients:
- 62.5g raw macadamia nuts
- 85g Medjool dates (I used only 70g because I don’t have a sweet tooth…)
- 26g coconut oil
- 10g shredded coconut
Mix all those ingredients together in a blender, and blend it until you have a thick combined mixture.
Divide it in 6 equal parts and place them in 6 silicone molds (or line molds with baking paper).
Press down evenly so that you have a good condensed base. Place them straight away into the freezer while you are preparing the filling.
2. The Filling preparation
Ingredients:
- 300g raw cashews (soak them overnight before using them)
- 240g coconut cream
- 85g raw honey
- 1-2 lime juice and zest
Mix all those ingredients together in a blender and blend it until the mixture is smooth and silky.
Take the bases out of the freezer (keep them in their molds) and put the fillings evenly on top of each one of them.
Place the cakes back into the freezer, for at least 3 hours.
Take them out of the freezer and out of their molds 10-15 minutes prior to serving.
For decoration, top them up with some fresh lime and crushed nuts.
And ENJOY!
I found them really tasty, quite nutty. I only used 1 lime juice and zest. I think that 1.5 or 2 limes would have been better. But that depends on your own taste ;-)
