Remember when I told you that you didn’t need to be frustrated because there are so many great healthy options out there…. That living a healthy lifestyle doesn’t need to be boring and/or frustrating?
I started with an amazing AVOCADO CHOCOLATE MOUSSE recipe, which I hope you enjoyed.
Today, I am sharing with you my first experience of baking healthy cookies… I do believe that they could be tastier BUT the recipe is the good one, so please give it a try and let me know if you have any good tips to make it even better :-))
WHY USE COCONUT FLOUR?
Many people are sensitive to gluten, whether they have obvious symptoms or not. Not only people with celiac disease should avoid eating it. Unfortunately today, because of the quality of it and the way it is processed, gluten attacks our Immune System and makes us weaker and weaker. If you want to decrease your overall Inflammation state, you should start avoiding eating gluten as much as possible (note: inflammation is the beginning of approx. 90% of all modern diseases).
Therefore, YES. Coconut flour is an amazing solution!
Coconut flour is the result of fresh pressed meat of the coconut. The milk is removed, some of the oils get extracted and what is left is then grated to become flour.
Compared to other flours, it ranks highest in dietary fiber (11g per ounce) and also contains 5g of protein per ounce.
Coconut flour also contains lauric acid and its known antiviral and antibacterial health benefits, and also capric acid which may help balance the insulin levels in your body.
PERSONAL NOTE: I used this recipe but replaced the Coconut Flour with Kamut flour!! Kamut flour doesn’t suit that much for this type of recipe but honestly, it worked well, so I can only imagine how good this must be with Coconut flour ;-)
Here it is:
For 8-10 cookies:
Ingredients: (ALL ORGANIC of course)
⅓ cup (37g) coconut flour
¼ cup (50g) coconut oil, melted
60-80g raw unpasteurised honey
4 fresh grated vanilla sticks
¼ tsp salt
2 whole eggs
⅓ cup (40g) dark chocolate chips
Instructions:
- Preheat your oven to 350F (175C) and line a baking sheet with a Silpat or parchment paper.
- In a medium bowl, whisk together the coconut flour, coconut oil, raw honey, vanilla, salt and eggs until a uniform batter is created. The batter will start off a bit runny, but will thicken as the coconut flour starts to absorb the moisture.
- Add in the chocolate chips, and stir to distribute them evenly.
- Bake in the oven for 20-30min
